First Favorite for this Tuesday
My second favorite for today happens to be Taco Soup! I first tried Taco Soup when I taught at Zalma. We would have lunches once a month (or more, cause we all liked to eat!) for various celebrations, or just because. Tina Huffman (Erika's momma), brought this yummy soup, and since it is soooooo easy to make, I added it to my recipe box. We have it in the winter time at least once every two weeks! Everybody in the family likes it except for picky Ashley and pickier Aimie (I really don't mind that they don't like it though, just leaves me leftovers - cause it is REALLY good as leftovers!!). Here's a picture, and the recipe so you, too, can enjoy!

Taco Soup
1 lb. browned ground beef
1 can rotel
1 can white corn
1 can light red kidney beans
1 can chili beans
1 can diced tomatoes
1 package taco seasoning
1 package dry ranch dressing mix
3 cups water
Mix all together and simmer. Instead of crackers, we use Fritos. YUMMY!!!
